Description

This picturesque plot, named Salgadero, was planted in 1930 with goblet-trained vines and natural irrigation. The robust Tinta de Toro vines of Salgadero, gnarled by time, are just one more example of the resilience found in the El Pego terroir. Respecting nature and the traditions of Toro, sustainable and responsible winemaking processes are employed to create this elegant, full-bodied, and highly concentrated wine with robust, ripe, and rounded tannins.

Salgadero grapes are hand-harvested in 15 kg crates, with an average yield of 0.4 kg. Gentle destemming takes place, then the juice is fermented in stainless steel tanks at cool temperatures for a long maceration period. There are two pump-overs per day during fermentation and then only one until the end of maceration at a lower temperature. This process lasts approximately 31 days. It is then aged in French and American oak barrels for 12 months.

The wine offers an intense aroma of cooked black fruit, with notes of spice and licorice.

On the palate the flavors are very concentrated, with round and robust ripe tannins. Black fruit, a touch of mint, with a long and elegant finish.
